PRINCESS ANNE, MD -Tickets go on sale Oct. 5 for the University of Maryland Eastern Shore’s gourmet dining series; a long-time fall tradition.  This year, hospitality and tourism management students and faculty have planned a Veterans’ Day salute and a month later, a holiday celebration.

The five-course meals take place Nov. 11 and Dec. 2 at 7 p.m. in the Richard A. Henson Center ballroom. Advanced tickets are required and can be purchased in the Henson Center, suite 2100, Monday through Friday, from 9 a.m. to 1 p.m. The cost is $50 per person, per meal.

A curry seafood chowder and crab imperial get things started Nov. 11 and end with a champagne toast in honor of active service men and women and veterans.  In between, diners can enjoy a mushroom-stuffed filet mignon served with Carolina Hoppin’-John and New York-style cheesecake with raspberry sauce.

Ring in the holiday season with a reception headlined by a Creole pork loin carving station accompanied by shrimp cocktail, jerk chicken, bruschetta and seafood phyllo.  An oyster cream soup is an introduction to an entrée of braised short ribs garnished with shrimp and accompanied by cheesy potato puree.  A raspberry soufflé tops off the evening meal.
