{"id":1599,"date":"2018-03-30T01:22:00","date_gmt":"2018-03-30T05:22:00","guid":{"rendered":"https:\/\/wwwcp.umes.edu\/pr\/?p=1599"},"modified":"2026-07-13T22:34:58","modified_gmt":"2026-07-14T02:34:58","slug":"umes-alumna-comes-full-circle","status":"publish","type":"post","link":"https:\/\/wwwcp.umes.edu\/scm\/umes-alumna-comes-full-circle\/","title":{"rendered":"UMES Alumna Comes Full &#8216;Circle&#8217;"},"content":{"rendered":"\n<div class=\"wp-block-image\"><figure class=\"alignright size-large is-resized\"><img loading=\"lazy\" decoding=\"async\" src=\"https:\/\/wwwcp.umes.edu\/scm\/wp-content\/uploads\/sites\/219\/2021\/09\/caitlin-lacomb-version-2.png\" alt=\"\" class=\"wp-image-1600\" width=\"195\" height=\"278\" srcset=\"https:\/\/wwwcp.umes.edu\/scm\/wp-content\/uploads\/sites\/219\/2021\/09\/caitlin-lacomb-version-2.png 314w, https:\/\/wwwcp.umes.edu\/scm\/wp-content\/uploads\/sites\/219\/2021\/09\/caitlin-lacomb-version-2-210x300.png 210w\" sizes=\"auto, (max-width: 195px) 100vw, 195px\" \/><figcaption><strong>Caitlin Cecil LaComb<\/strong><\/figcaption><\/figure><\/div>\n\n\n\n<h4 class=\"wp-block-heading\">Mandala Pie founder is 2018 convocation speaker<\/h4>\n\n\n\n<p class=\"wp-block-paragraph\">Friday, March 30, 2018<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Caitlin Cecil LaComb returns April 5 to her alma mater to deliver the keynote address at the University of Maryland Eastern Shore&#8217;s 65<sup>th<\/sup>&nbsp;spring honors convocation. &nbsp;<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Since graduating with honors in December 2014 with a bachelor&#8217;s degree in general agriculture, LaComb served overseas as a U.S. Army Reservist, became a mother and launched an up-and-coming pie-baking business. &nbsp;<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">This past fall, LaComb won $10,000 in a \u201cstart-up\u201d business competition patterned after the \u201cShark Tank\u201d television show that was sponsored by the regional chamber of commerce in Fredericksburg, Va., where she lives with her husband and son, Branch. &nbsp;<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">That star turn quickly led to a feature article in Fredericksburg Living magazine, where readers learned about such creatively named confections as \u201cBees&#8217; Knees\u201d (a honey pie), \u201cGoats &amp; Gourds\u201d (pumpkins and cayenne) and \u201cPink Zebra,\u201d a lemon and organic raspberry combination. &nbsp;<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">\u201cPie baking is my tool to make the community better,\u201d she told the magazine. &nbsp;<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Growing up in Salisbury, LaComb didn&#8217;t have to look far for inspiration in creating tasty and nutritious dishes. Her mother is&nbsp;<strong>Dr. Malinda Cecil<\/strong>, a Registered Dietitian and an assistant professor who directs UMES&#8217; undergraduate dietetics program. &nbsp;<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">As a UMES junior, LaComb conducted a research project studying the absorption of toxic materials in soil by sunflowers, and she planted hundreds of different varieties on campus.&nbsp;She was awarded a travel grant during her senior year to visit Ghana under a work-study program and learned about the African nation&#8217;s agriculture system. Since that initial overseas travel opportunity, she has visited four continents. &nbsp;<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Throughout her time at UMES, she worked in the agriculture laboratory as a sustainable agriculture research intern under the direction of&nbsp;<a href=\"https:\/\/www.umes.edu\/Agriculture\/Pages\/Faculty-Bios\/Corrie-Cotton,-M-L-A\/\"><strong>Corrie Cotton.<\/strong><\/a>&nbsp;&nbsp;<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">LaComb enlisted in the military at age 17, serving eight years as an Airborne Civil Affairs Specialist. She deployed to the Horn of Africa in support of Operation Enduring Freedom immediately after graduating from UMES and has since worked in a variety of jobs, including as a nutrient management adviser for the Maryland State Extension System. &nbsp;<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Her focus now, with an expanding baking business, is on improving her community&#8217;s agriculture system by sourcing ingredients locally to use in each pie. &nbsp;<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">\u201cWe strive to connect the consumer to agriculture by using organically grown ingredients, sourced locally when possible,\u201d she told the lifestyle magazine in the November article. &nbsp;<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Dr. Michael Lane, the director of UMES&#8217;&nbsp;<strong><a href=\"https:\/\/www.umes.edu\/honors\/\">Richard A.
