{"id":8150,"date":"2021-10-06T10:42:00","date_gmt":"2021-10-06T14:42:00","guid":{"rendered":"https:\/\/wwwcp.umes.edu\/sans\/?p=8150"},"modified":"2024-01-24T11:59:40","modified_gmt":"2024-01-24T16:59:40","slug":"attuquayefio-defends-food-and-agricultural-sciences-thesis","status":"publish","type":"post","link":"https:\/\/wwwcp.umes.edu\/sans\/uncategorized\/attuquayefio-defends-food-and-agricultural-sciences-thesis\/","title":{"rendered":"Attuquayefio defends Food and Agricultural Sciences thesis"},"content":{"rendered":"<div class=\"wp-block-image\">\n<figure class=\"alignleft size-full\"><img loading=\"lazy\" decoding=\"async\" width=\"250\" height=\"288\" src=\"https:\/\/wwwcp.umes.edu\/sans\/wp-content\/uploads\/sites\/141\/2024\/01\/Wendy-Attuquayefio-headshot.1-1.jpg\" alt=\"\" class=\"wp-image-9287\" title=\"Wendy Attuquayefio\"\/><\/figure>\n<\/div>\n\n\n<p class=\"wp-block-paragraph\"><strong>Wendy Attuquayefio<\/strong>, a doctoral graduate in food and agricultural sciences at UMES, recently defended her thesis, \u201cEffects of Heat Stress and Oxidized Diet on Productivity, Oxidative Stress, Postmortem Muscle Metabolism and Meat Quality of Broilers.\u201d&nbsp;<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">\u201cHigh environmental temperatures that occur during the summer months may cause heat stress in broilers and oxidation of fats in their feed,\u201d Attuquayefio said.&nbsp; \u201cThis can lead to increased oxidative stress in live broilers, causing changes in the muscle after slaughter and affecting the meat quality of chicken.\u201d<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Her research at UMES explored the use of vitamin E supplementation to alleviate the negative effects of heat stress in broilers.&nbsp; Attuquayefio\u2019s advisor is Dr. Byungrok Min, associate professor, food science and technology.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">\u201cThe results suggested that both high environmental temperature (chronic heat stress) and heat waves (acute heat stress) during broiler production adversely affected chicken productivity,\u201d Attuquayefio said.&nbsp; \u201cThe oxidative stress conditions induced by heat stress, oxidized diet alone and in combination may also cause adverse changes in energy metabolisms in the breast muscle of broilers and deteriorate oxidative stability in breast meat.\u201d<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">She also found that dietary vitamin E supplementation could be \u201ca good strategy to mitigate the adverse effects of oxidative stress and improve the oxidative stability of chicken breast meat.\u201d<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">\u201cWendy is a smart, hard-working researcher who is committed to continuous learning and making a difference,\u201d Min said.&nbsp; \u201cHer research suggested the mechanisms of how environmental heat stress caused by climate change affect chicken productivity and meat quality, and shed light on that the antioxidant supplementation to chicken feed could be one of the effective mitigation strategies against heat stress for the chicken industry.\u201d<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Attuquayefio came to the U.S. from Accra, Ghana, to pursue a master\u2019s degree in food science from Pennsylvania University.&nbsp; She holds a bachelor\u2019s degree in nutrition and food science from the University of Ghana, Accra.&nbsp; She is a member of the Poultry Science Association, the American Society of Animal Science and the Honor Society of Phi Kappa Phi.&nbsp;
